The King family of London, Ohio makes Farmstead Gouda, a cheese originating in Holland. Their milk is similar to what Dutch cheese makers use for their Gouda. Holland’s milk source is mainly Holstein-Friesian dairy cattle that produce higher fat and protein content than average U.S. Holsteins and less volume of milk.
Farmstead cheese is unique to the place it originates and the people who make it. The flavor of the milk is created by the cows themselves, their diet, the land they live on, and the care they receive. It is up to the cheese maker to preserve the flavor and enhance it with care. Each vat of cheese will be slightly different. Even the weather plays a part in the cheese flavor the day it is made.
