The Butcher Shop at West Point Market has been the centerpiece of our store since 1936 by following a simple philosophy; sell only the best, sell it fresh, and sell only what you believe in. Today in a commodity world, we don't take that promise lightly. No matter what the cut, we painstakingly source it, sometimes all the way to the feeder to insure that the quality we offer is real.

For all of our meat and poultry we insist on the United States as the country of origin. All meats are USDA inspected, but we prefer that it also be USDA Graded to insure standards of quality with no brines or flavorings added during processing. And, when possible, we prefer vendors who are local.
We only sell USDA graded true Prime and Upper Choice (highly marbled) beef born and raised in the United States. All our beef is cut and trimmed by our staff at the store, (never prepackaged) ensuring that you get exactly what you want. We specify only young cattle for tenderness and cuts are aged a minimum 21 days so we sell it grill-ready; at the peak of flavor.
Our lamb is Colorado high country born and raised. It is naturally raised genuine USDA young lamb so the flavor is mild. Unlike Australian / New Zealand breeds, the rib chops are large, tender and meaty. We've blind-tasted our lamb against dozens of other programs and it consistently wins hands-down.
Our pork is raised within 100 miles of Ottumwa, IA. It is fed for greater marbling much like pork used to be 50 years ago. The result is that it cooks exceptionally tender and juicy rather than dry. It is raised under USDA-verified, state-of-the-art animal welfare practices that ensure optimal quality. There are no added fillers, brines or flavoring solutions of any kind.
Unlike beef, where aging promotes flavor, chicken should always be sold within only a minimum of time after it has been processed. We haven't found a chicken processed in the Carolina's or Arkansas that can meet our freshness standards. Our chicken is Stark County, Ohio born and raised; fed a natural, hormone free diet and humanely processed at the state's only USDA graded facility. They're delivered to West Point throughout the week, from just a holler down the road. 
At West Point Market, we eat our own cooking. All the beef, lamb, pork and chicken sold in our Butcher Shop is the same that we use in our own West Point kitchens for the Deli and Beside the Point Cafe entrees.

The availability of high quality fish and seafood changes on a daily basis. We carefully source only the freshest fish available in our region. From limited season catches like Alaskan King Salmon to all-year species like swordfish, the thing we promise our customers is satisfaction. When we talk about fish quality, we don't tell fish stories. We are proud to label our fish with the country of origin and whether it is wild or farmed.
