A unique full, nutty, crunchy Reggiano made from the milk of the Vacca Rossa, or red cow, breed. This breed was endangered until protection was granted in the early 1980's. Their milk is richer and creamier than most cows’, and higher in antioxidants. It is said you can actually taste the grasses, flowers and soil of Italy. The cheese is made from raw milk and aged for a minimum of 12 months, up to 24.
