Asiago Vecchio is a slightly fruity cheese that becomes sharper and more piquant with age. It's name "Vecchio" (Italian for "old") refers to its maturation, which is around nine months. This aging gives the cheese a strong character any Asiago lover will crave upon tasting. Serve this cheese with grapes, figs, bread, or crackers. Melting well when grated, Asiago Vecchio is excellent grated over pasta, in omelettes, or added to pizzas.
